Senegal restaurant POS: the choice that structures everything
POS (Point of Sale) selection is the most structuring technical decision for a Dakar restaurant in 2026. It conditions service speed, bill reliability, tax compliance, multi-site consolidation, mobile money integration (Wave, Orange Money) and margin tracking.
The formal Senegal restaurant market counts ~2,800 establishments (Dakar + main cities) in 2026, including 380 multi-site groups. Yet fewer than 35% use a structured POS. The majority still runs on Excel + notebooks or disconnected cash registers. Migrating to a pro POS is today the #1 IT project requested by restaurateurs who want to industrialize.
I have supported 23 POS migrations since 2023 (brasseries, halal restos, dark kitchens, Almadies hotel-restaurants). Here is the no-nonsense comparison of the 3 solutions covering 80% of real cases.
H2: The 12 criteria that actually decide
The primary criterion in Senegal is never "interface beauty" but operational resilience. Here is the audit grid:
- Offline mode — works without Internet for ≥ 4h, auto-resync on return?
- Native multi-site — centralized consolidation of stocks/prices/menus without paid add-on?
- Wave integration — Wave QR / Wave Merchant Pay from the POS?
- Orange Money integration — OM payment via link or QR on the bill?
- Cash + card + mobile money — split payment on same bill?
- SYSCOHADA invoicing — sequential numbering, NINEA, 18% VAT, compliant delivery notes?
- Compatible hardware — kitchen thermal printer, cashier screen, QR reader, drawer?
- Multi-language interface — French + English + phonetic Wolof on tickets?
- Ingredient stock management — recipe/cost per dish, shortage alerts?
- Margin reporting — real food cost, per-dish margin rate, top/flop?
- Local Dakar support — integrator reachable on WhatsApp, intervention within 24h?
- 3-year TCO — licenses + hardware + transaction fees + support over 36 months.
H2: Square — easy entry but transaction trap
Square (Block Inc.) is the easiest POS to deploy. iPad or Android app, 2h setup. Dish catalog, modifiers (sauce, cooking), kitchen tickets via Bluetooth thermal printer.
- Offline: YES, ≥ 24h, auto-sync on return
- Multi-site: YES but via "Square for Restaurants Plus" offer (89 USD/month/site)
- Wave / OM: NOT native. Workaround: Wave QR printed on the bill (manual)
- Hardware: Square Stand iPad ~280 KFCFA, Star TSP100 printer ~180 KFCFA
- SYSCOHADA: NOT native. CSV exports to reprocess in external accounting
- Pricing: 0 USD/month Free plan, or 60-150 USD/month Plus plan. Card commission 2.6% + 10c USD per Stripe/Square transaction
- Support: 100% EN, no official Dakar integrator (but 4-5 freelancers know the tool)
Square verdict: excellent for solo resto (1 site, average basket 8-15 KFCFA, volume < 80 transactions/day). Beyond that, the 2.6% commission eats margins. For a resto with 45 M FCFA card revenue/year, that is 1.17 M FCFA in Square commission per year, vs 0 FCFA via Wave Pro Merchant (1.5%).
H2: Lightspeed Restaurant — the multi-site hotel standard
Lightspeed Restaurant (formerly Upserve) targets chains and hotel groups. Very rich backend: visual table plan, integrated reservation management, food cost engine, OpenTable integration, native loyalty.
- Offline: YES, 4h in degraded mode (order taking, cash payment)
- Multi-site: EXCELLENT — native consolidation, per-site pricing, inter-site stock transfers
- Wave / OM: NOT native but REST API allows custom plugin (2-3 weeks dev, ~1.8 M FCFA at Dakar integrator)
- Hardware: iPad + Lightspeed Server Box ~480 KFCFA initial hardware per site
- SYSCOHADA: YES via "Custom Tax & Invoice" module + NINEA setup
- Pricing: 69-289 USD/month/site by plan. Card commission via third-party processor (Stripe Senegal unavailable, so Adyen or ProcessOut workaround ~1.8-2.4%)
- Support: EN + FR (Montreal team), tickets within 24h. Known Dakar partner integrators: 2
Lightspeed verdict: best choice for Almadies/Saly hotel-restaurants, 3+ site groups, premium brasseries like Le Lagon, Cabane du Pêcheur. 3-year TCO for 4-site group: ~18-24 M FCFA (licenses + hardware + support + Wave plugin). Justified beyond 350 M FCFA aggregated revenue.
H2: SambaPOS — unbeatable value for money
SambaPOS is a Turkish open source POS (V5 = 599 USD perpetual commercial license per site, V6 = 39 USD/month subscription). Very powerful on kitchen workflow, modifiers, recipes, multi-printers by zone (hot, cold, bar).
- Offline: YES 100% (local SQL Server / MySQL server architecture)
- Multi-site: YES via SambaPOS Cloud Manager (29 USD/month/extra site)
- Wave / OM: NOT native but "Script Module" allows calling Wave Merchant API from the ticket. 12 Dakar restos already do this via local integrator
- Hardware: industrial PC or Windows tablet ~320 KFCFA, Epson TM-T20 printers ~165 KFCFA
- SYSCOHADA: YES via customizable "Document Template Editor" (4-6h setup at integrator)
- Pricing: 599 USD perpetual V5 (~360 KFCFA, one-time payment) or 39 USD/month V6
- Support: EN + very active forum community (replies < 24h). 3 Dakar integrators master SambaPOS
SambaPOS verdict: TCO champion. For a single-site resto-bar wanting 100% offline, multiple kitchen screens, integrated Wave payment: no competitor. 3-year TCO: ~2.4 M FCFA all-in vs ~7.8 M FCFA for Square Plus or ~14 M FCFA for Lightspeed.
H2: 3-year TCO — the numerical truth

Multi-site 2-3 (revenue 200-500 M FCFA): SambaPOS V5 + Cloud Manager + experienced integrator for stock and menu sync. Premium alternative: Lightspeed Restaurant Starter.
4+ site hotel group (revenue > 500 M FCFA): Lightspeed Restaurant Advanced. Justified by OpenTable integration, food cost engine, loyalty module, and 24/7 support.
Pure delivery dark kitchen: SambaPOS V5 + Yango Food / Glovo / Jumia Food plugin via API (cf dedicated article in this batch).
FAQ
Is the free Wave Business POS enough?
For very small solo gargotte (revenue < 25 M FCFA/year, < 50 dishes/day): yes. Beyond: no. Wave Business does not handle modifiers (cooking, sauce, allergens), no kitchen tickets per zone, no ingredient stock management, no food cost. And the accounting export is not SYSCOHADA-ready.
How long does a migration take?
For single site resto: 3-4 weeks (audit + menu setup + team training + cutover + 2 weeks parallel). For 4-site group: 8-12 weeks. The main risk is never technical, it is adoption by floor and kitchen staff.
Buy or rent hardware?
Purchase recommended: 36-48 month amortization, POS hardware lasts 5-7 years in practice. Disguised rental ("all inclusive" offers at 79 USD/month) costs 2.8× the real price over 5 years. Only exception: ephemeral or pop-up restos < 12 months.
Which thermal printer to choose?
For cashier: Star TSP100 III (USB+Ethernet, ~165 KFCFA) or Epson TM-T20III (~145 KFCFA). For kitchen (humid/greasy area): Epson TM-U220B with sealed casing (~280 KFCFA). Avoid consumer Bluetooth printers, < 18 month lifespan in kitchen.
Can the POS run on low-cost Android tablet?
SambaPOS: no, Windows only (but 280 KFCFA Windows tablet works). Square: yes on Samsung Tab A8 (~180 KFCFA). Lightspeed: iPad mandatory (~420 KFCFA minimum). Avoid tablets < 150 KFCFA in restaurant, MTBF < 14 months in hot environment.
